Nielsen-Massey Mexican Vanilla Paste

Mexican vanilla paste has a deeper vanilla character with spicy and woody notes. It’s especially nice in recipes where you want vanilla flavor that won’t get lost behind warm spices.

Mexican vanilla paste is a great fit for baking and cooking, from spiced cookies and cakes to homemade ice cream. It also pairs well with savory dishes like poultry and seafood when you want a subtle, warm vanilla note.

Nielsen-Massey uses a cold extraction method designed to help preserve the natural complexity of vanilla. The brand notes that natural vanilla contains more than 400 flavor compounds, which contribute to a fuller, more layered taste.

Stir Mexican vanilla paste into batters, doughs, custards or ice cream bases so the flavor distributes evenly. If you are trying it in a savory recipe, start with a small amount, taste and adjust so it complements the other ingredients.

Vanilla is a labor-intensive crop that requires hands-on work over a long growing cycle. The vines are hand-pollinated, beans are harvested at peak ripeness and then cured for months to develop their signature aroma and flavor.
