Hestan ProBond® Luxe Stainless Steel Sauté Pan, 3.5 qt.

A stainless steel sauté pan is ideal when you want to sear, braise and simmer in one piece of cookware. The wide surface helps you brown evenly, while the straight sides give you room to stir, reduce sauces and keep liquids contained. It is a great choice for one-pan meals that start with a hard sear and finish with a gentle simmer.

This stainless steel sauté pan includes a matching flush stainless steel lid. The lid is designed to sit neatly on the rim to help trap heat and moisture when you are simmering or braising. The pan also features a seamless handle designed with Chef Thomas Keller.

In this stainless steel sauté pan, ProCore aluminum is used to deliver 35% greater heat conductivity, helping the pan heat quickly and respond when you lower or raise the burner. That added responsiveness is especially helpful for switching from searing to sauce work without long wait times. It also supports more even browning across the cooking surface.

Pick the 3.5-quart stainless steel sauté pan for everyday proteins, vegetables and smaller braises. Choose the 5-quart size when you want extra room for larger batches, family-style meals or more liquid for longer simmers. If you often cook for a crowd or like leftovers, the larger pan gives you more flexibility.

For a strong sear in a stainless steel sauté pan, give the pan time to heat before adding food and avoid crowding the cooking surface. Let proteins release naturally before flipping so you get better browning and less sticking. Once you have color, you can use the browned bits to build a quick pan sauce.
